Yummy recipes

I think our nesting has begun, not only have we gutted our whole house but we have started trying out some lush new recipes for simple but yummy food that we'll be able to make when sleep deprived and lacking the time to cook. On Saturday we tweaked a Mary Berry recipe that i'd seen on Saturday Kitchen a few weeks ago. We managed to sneak in a couple of extra veggies which the kids didn't complain about and added a little extra goodness. Below is the original recipe, we added peppers and sweetcorn with the chicken.
Ingredients
butter, for greasing
250g/9oz penne
1 onion, roughly chopped
3 skinless, boneless chicken breasts, cut into thin strips roughly the size of your little finger
1 tbsp paprika
2 tbsp olive oil
salt and freshly ground black pepper
For the Sauce
50g/1¾oz butter
50g/1¾oz plain flour
750ml/1 pint 6 fl oz hot milk (see tip)
1 tsp Dijon mustard
100g/3½oz Parmesan cheese, coarsely grated
2 large tomatoes, deseeded and cut into small cubes
The carrots in our fridge also looked on their way out so i transformed them, chysalis into butterfly, dying carrots into scrummy carrot cake! I followed a great and very easy recipe from 'bakewithstork'.
My last homemade goodies are banana and chocolate chip bites. They took two minutes to make and 15 to bake. They contain no sugar, flour or eggs so aare not only almost sinless but also great nibbles for those with allergies or intolerances.
